German egg pancake recipe

3 eggs
1/2 C milk
1/4 t salt
1 T sugar
1/2 C flour

First, whisk your eggs in a large bowl.
Then, add the milk, salt, and sugar, and mix well.
Finally, add the flour a little bit at a time and whisk it all together until there are no lumps. But not too long, or the pancake won’t be fluffy.

Pour the batter in a large greased skillet–any kind works as long as it’s 9” across. Or you could divide the batter and make tiny ones if you have smaller pans. Sometimes I make small ones in my 4” cast iron skillet.

Bake at 450 degrees for about 12 minutes, until the edges are brown. Watch it after about 10 minutes because it’s so fun to watch the surface bubble and grow! This is a fun thing to make with kids.

I like to eat it with butter, powdered sugar, syrup, or strawberries. Or all of those things at once.

    Made these for breakfast this morning. They were great!

    I added a teaspoon of pure vanilla extract, which made them that much better.

    I want to make them for lunch and dinner too! I could eat these all day.

    It’s dark and rainy in Rochester, NY today and I decided to make this German egg pancake for the kids that I nanny. They LOVED watching it puff in the oven and devoured a whole one in like 2 minutes. I’m currently making another. These are my new favorite thing! I can’t wait to make one for my husband!     Mmmm, my mom used to make these all the time! She would bake it in a big cast iron skillet, and we would always eat them with butter and powdered sugar.

    I keep meaning to make this for my husband (who has never even heard of it – can you believe that?!) And I’m pretty sure my 2-year-old will devour it! You’ve inspired me…this is going on the list next week!

    German pancakes are a family tradition in our house…my mom made them on all the special occasions…I love them!! I eat mine with powered sugar and lemon juice (fresh squeezed..not that bottled stuff).
